Recipes for Homemade Easter Eggs is a Tradition in our family and we all join in the in the fun! Coconut Easter Eggs and Peanut Butter Easter Eggs is an old fashioned four generational practice in our home. Over the years, we have all instituted our own shortcuts to the procedure, but the recipe stays the same. It would not be the same without Great Grandma’s Homemade Easter Eggs. We (the 5 girls in our family) all carried on her traditions for as long as we could. Now we need to pass on to the grandchildren, nieces and nephews (although my brothers were not interested in kitchen stuff)! They ate it all but they were never great dishwashers either! So grateful for the automatic dishwashers we enjoy today!
Recipe for Coconut Easter Eggs:
8 oz. Cream Cheese; 2 lbs. powdered sugar;
2 cups shredded Coconut; 1/2 lb. butter; 2 teasp. vanilla.
Combine all thoroughly and shape into eggs. Place on waxed paper on a cookie sheet and set in cool place until firm.
In a double boiler, Melt 6 oz. dark chocolate; 1 tblsp grated parafin wax and 1 tblsp. crisco. Dip eggs one at a time in chocolate until completely covered and set back on waxed paper on cookie sheet to dry. Drizzle with darker chocolate (add cocoa to darken)…OR white chocolate chips (melted).
Use a fork to balance your egg for coating and do not touch with fingers. Lay carefully on waxed paper!
Time For a little Wine Magic and relaxation for a few minutes before starting the next recipe!
Recipe for Peanut Butter Easter Eggs:
2 1/4 cups powdered sugar; 3/4 cups peanut butter; 1/4 cup butter; 1/2 teasp. vanilla; 1/4 teasp. salt. Mix well (if too stiff, add just a few drops milk)
Shape into eggs and let set on cookie sheet lined with waxed paper. When set, proceed to dip in chocolate (using melted chocolate recipe above) and set back on waxed paper until dry.
When chocolate is hard and cool on eggs then both coconut eggs and peanut butter eggs can be put in plastic container with waxed paper between layers and refrigerated.
It takes a little practice to shape and dip your Easter eggs to look appealing, but it is not difficult. You will perfect it after 3 or 4 eggs! I never coat mine until they have set a full 24 hours.
