Ham and Potato Casserole is one of my favorite Comfort Foods and it great on a damp, cold day! I usually make it from the smaller pieces of leftover ham! Pair it with a green bean side dish and a good crusted dinner roll and you have an easy family meal! One of my kid’s favorites!
My recipe begins on a Tuesday after Sunday’s Baked Ham Dinner! I prepare two more meals from my leftover ham. One is the ham and potato casserole and the other is a pot of ham and bean soup. If you have a house full of kids like I did, that ham just gave us three meals. Isn’t it smart to use a big ham with a ham bone?

Recipe for Ham and Potato Casserole
For the 9×13 casserole, you need 2 cups of diced ham (less is ok). Peel and slice a medium onion and break up the circles. 1 lb. of real American Cheese and about 6 large white potatoes. A 1/2 cup of the ham juice is a great addition, but lower your milk in the final process! Melt 5-6 slices of cheese in 1 cup milk on very low heat. Peel potatoes and slice thin.
Line casserole with a layer of each: sliced potatoes, ham, onions, cheese, and repeat twice more for a large casserole or once is enough for small casserole. Mix 2 tablespoons flour and 1/3 cup milk in a shaker and shake well. Add this to your melted cheese. (optional: you can also add a 1/2 cup of ham juice) Pour all liquid over casserole and top with a final layer of cheese! Bake 1 hour at 375*. As a side, I often use leftover green beans because they go so well, but any veggie of your choice is fine! So scrumptious!

Ham and Bean Soup Recipe
Boil Ham Bone for at least an hour in a large pot of water and add all ham juice from Baked Ham! Cook ham bone for several hours! (Crockpot works great) Add whatever ham was not used in Casserole! Peel potatoes, quarter and add to the pot. Snap fresh green beans and add. Use enough potatoes and beans for your size family, and according to the amount of ham you have. Add 1-2 large bay leaves and 3 large allspice and pepper to taste. Simmer until veggies are cooked. Great soup on a rainy day!
