Chicken Satay Skewers
Chicken Satay Skewers: Served with riced veggies and a scrumptious dipping sauce! First (and this is MOST important) pour a glass of amazing Rosé…Now you can begin your preps!
Marinade: 2 tsp. lemon zest; 1 tbsp. lemon juice; 1/2 tsp ground coriander; 1 tsp turmeric; 1 tbsp. coconut aminos (or low sodium Soy Sauce, if not Paleo); 2 tbsp. olive oil;
Sauce: 1 tbsp. tahini (sesame butter); 2 tbsp. almond butter; 1 tbsp lemon juice; 3 tbsp coconut milk; 1 minced garlic clove; Pinch of chili powder; mix all ingredients thoroughly and divide into 4 dipping dishes and put aside.
Veggies: 2 lbs of riced cauliflower & Broccolli – or riced mixed vegetables; 1 small diced onion; 1-2 cloves garlic. Melt coconut oil in a large skillet or wok and saute diced onion and minced garlic – about 5 minutes, then add butter. Stir fry veggies in it gently.
Chicken: As veggies cook, thread 3-4 pieces chicken on each skewer. Heat a grill Pan after spraying with cooking spray. Grill chicken skewers for 2-3 minutes on each side.
Serve your Chicken Satay Skewers with the vegetable rice and dipping sauce and…enjoy another amazing glass of Rosé.
